Yellow Vegetable Pickles

( Acar Kuning )

Acar Kuning

This yellow vegetables pickles or acar kuning is usually eaten as a side dish with yellow rice (nasi kuning) or plain rice (nasi putih). It’s very fresh! Here's how to make it.

Cooking time : 15 minutes

Ingredients

- 2 medium cucumbers, peeled, seeded and cut matchsticks

- 1 carrot, peeled and cut in matchsticks

- 2 bird's-eye chillies (Indonesian cabe rawit), sliced

- sugar and salt for taste

- 3 tablespoons vinegar

- 1 cup water

- 1 tablespoon oil

Spice Paste

- 5 Candlenuts (Kemiri)

- 1 teaspoon turmeric powder

- 5 shallots

- 2 cloves of garlic

Directions

1. Heat 1 tablespoon of oil, fry the spice paste. Add sugar, salt and vinegar.

2. Put the carrot, cucumber and chillies inside, add 1 cup of water. Mix together and cook until vegetables tender. But don't overcook!
